EGGLESS COCOA CAKE – TESTED RECIPE
Ingredients:
- 100 g/3½ oz butter
- 2 tbsp fruit jam
- 200 g/1 cup sugar
- 3 tbsp cocoa
- 250 g/2 cups flour
- 175 ml/¾ cup milk
- 1 tsp baking soda
- 2 tsp vanilla extract
- chocolate glaze
Method:
- Preheat the oven to 180°C/360°F. Prepare a 28x10cm/11x4in rectangular baking pan and line it with parchment paper. Melt the butter then let it cool down until it’s just warm
- Pour the milk in a bowl and add soda to it, then whisk well
- In a large mixing bowl put together flour, sugar, cocoa and jam(in my case raspberry). Then, pour in the butter and start mixing
- After all the ingredients blend together, lower the spins on the mixer and add the vanilla extract, then the milk with soda. Mix well
- Pour the prepared dough into the baking pan and spread it evenly. Put it in the oven for about an hour (you can test if the cake is ready by sticking a skewer in the middle of it. If it comes out dry, the cake is done)
- After the cake cools down a little decorate it with chocolate glaze from top before serving
