WHOLE WHEAT PANCAKES RECIPE – Delicious, healthy pancakes you can eat with cottage cheese and some fresh chive on top
WHOLE WHEAT PANCAKES RECIPE
Ingredients:
- 100 g/¾ cup whole wheat flour
- 100 g/¾ cup flour
- 250 ml/1 cup water
- 80 ml/1/3 cup milk
- 2 eggs
- 3 tbsp oil, plus extra for frying
- ½ tsp salt
Filling:
- 250 g/9 oz cottage cheese
- 2 tbsp sour cream
- Bunch of radish
- ½ bunch of chive
- salt
- pepper
- cucumber
Method:
- Pour all the dry and liquid ingredients in a large bowl and mix well. If the dough is to thick add more water
Heat up a pancake pan and put few drops of oil on it.
- Pour some dough on the pan and spread it evenly, enough to cover the whole surface with a thin layer. Fry from both sides (flip the pancake when air bubbles start showing on the surface)
- Now prepare the filling: place the cheese in a bowl and mince it with a fork. Add the cream and finely chopped radish wich chive. Season with salt and pepper for taste and stir well
- Spread some of the filling evenly on the pancake’s surface and put few slices of cucumber on top. You can either fold or roll the pancake, then it’s ready for serving!
