LEEK SALAD RECIPE – this delicious, vegetarian salad is a common side on family gatherings in our house for years now
LEEK SALAD RECIPE
Ingredients:
- 2 leeks, white part
- 4 eggs
- 1 apple
- 6 pickles
- 340 g/12 oz tin corn, drained
- 6 tbsp mayonaise
- 1 tsp mustard
- salt
- black pepper
Method:
- Hard boil the eggs, set them aside to cool off. Wash the leeks throughly, dry them, then cut in halves along the length and into slices. Put them in a large bowl, add a pinch of salt and set aside for an hour
- After an hour drain the leek and add to it diced eggs, pickles and apple, as well as the corn. Mix them all together well
- Whisk the mayo with the mustard, add salt and pepper. Pour the mix over the salad and toss it well. Serve cold after a moment in the fridge
